Special Potato Casserole Recipe

Looking for an interesting new side for Thanksgiving? Maybe you would like this Special Potato Casserole Recipe. My wife recently made it and I absolutely loved it. It is creamy and very delicious. It has a slight orange color to it and a nice crisp topping. You also prepare much of this dish the day before.

Ingredients:
8 medium Red Bliss Potatoes
1 large Sweet Potato
3 cloves Garlic
4-6 oz of plain Goat Cheese
1/2 cup Light Cream
1 stick of Butter
Salt & Pepper

The day before:
Peel the potatoes and then boil them in a pot with the garlic cloves.
Once they are done, drain the water out and mash the potatoes and garlic.
Mix into the mashed potatoes, the goat cheese, cream and 1/2 a stick of butter. Add salt and pepper.
Place it all into a casserole dish and refrigerate over night.

The day of:
Remove the casserole from the refrigerator and let sit at room temperature for 1 hour.
Melt 1/2 stick of butter and pour atop the casserole.
Bake uncovered at 350 for 1 hour and then serve.
